Stuffed Tomatoes

Instructions

  1. Halve and seed the tomatoes; season with salt and pepper.
  2. Make a base of minced onion, parsley, and celery in butter; add minced dried mushrooms and bread cooked in milk; simmer.
  3. Off heat, stir in Parmesan and egg (or yolk) to firm the stuffing.
  4. Fill the tomatoes, mounding, and cook between two fires with butter and oil.
  5. Variants: a simple garlic-parsley-breadcrumb filling, or halved buttered tomatoes baked uncovered as a garnish for boiled meat.
