Stuffed Tomatoes

Ingredients
- tomatoes
- salt
- pepper
- onion
- parsley
- celery
- butter
- dried mushrooms
- spoonful bread cooked in milk (pappa)
- milk
- grated Parmesan
- egg
Instructions
- Halve and seed the tomatoes; season with salt and pepper.
- Make a base of minced onion, parsley, and celery in butter; add minced dried mushrooms and bread cooked in milk; simmer.
- Off heat, stir in Parmesan and egg (or yolk) to firm the stuffing.
- Fill the tomatoes, mounding, and cook between two fires with butter and oil.
- Variants: a simple garlic-parsley-breadcrumb filling, or halved buttered tomatoes baked uncovered as a garnish for boiled meat.
