Boned Thrushes in Aspic

Ingredients
- thrushes
- g lean milk-fed veal
- g salted tongue
- g fatty-and-lean ham
- g black truffles
- Marsala
- egg yolk
Instructions
- Reserve half the tongue and a third of the ham, diced.
- Pound veal with the rest of the tongue, ham and truffle peel, softened with Marsala; sieve and stir in an egg yolk.
- Bone the thrushes (as No. 258), leaving head and neck on, and fill with the mixture plus the reserved diced items.
- Sew, wrap each in caul, and boil an hour in aspic broth No. 3.
- Serve cold on the aspic, optionally in nest-shaped molds.
