Boned Thrushes in Aspic

Ingredients

Instructions

  1. Reserve half the tongue and a third of the ham, diced.
  2. Pound veal with the rest of the tongue, ham and truffle peel, softened with Marsala; sieve and stir in an egg yolk.
  3. Bone the thrushes (as No. 258), leaving head and neck on, and fill with the mixture plus the reserved diced items.
  4. Sew, wrap each in caul, and boil an hour in aspic broth No. 3.
  5. Serve cold on the aspic, optionally in nest-shaped molds.
