Fried Bread-Crumbs

Ingredients
- 4 oz stale bread
- 2 oz fresh butter
Instructions
- Grate the stale bread lightly into very fine, uniform crumbs.
- Shake the crumbs through a cullender or fine sieve without rubbing or touching them with your hands.
- Dissolve the fresh butter in a frying-pan over moderate heat.
- Throw in the crumbs and stir them constantly until they are all of a clear golden colour.
- Lift them out with a skimmer and spread them on a soft cloth or white blotting paper laid upon a reversed sieve.
- Dry them before the fire.
