Fried Bread-Crumbs

Instructions

  1. Grate the stale bread lightly into very fine, uniform crumbs.
  2. Shake the crumbs through a cullender or fine sieve without rubbing or touching them with your hands.
  3. Dissolve the fresh butter in a frying-pan over moderate heat.
  4. Throw in the crumbs and stir them constantly until they are all of a clear golden colour.
  5. Lift them out with a skimmer and spread them on a soft cloth or white blotting paper laid upon a reversed sieve.
  6. Dry them before the fire.
