Chestnut-Flour Cake (Castagnaccio)

Ingredients

Instructions

  1. Sift the chestnut flour, season with a scant pinch of salt, and work in 8 dl cold water gradually into a thin batter.
  2. Stir in a handful of whole pine nuts (optionally walnuts and raisins).
  3. Pour into an oiled pan about a finger and a half deep, spread two spoonfuls of oil on top (optionally scatter rosemary).
  4. Bake in an oven or between two fires and turn out hot.
