Sausage With Eggs

Ingredients
- sausage
- eggs
- butter or lard
- diced cured pancetta (carnesecca)
Instructions
- For fresh sausage, split it lengthwise and cook in a dry pan (it renders its own fat); for cured sausage, slice it and remove the skin.
- Once cooked, break the eggs over the sausage (one, at most two, per link) and serve when set.
- If the sausage is very lean, cook it with a little butter or lard.
- If using diced cured pancetta instead, add a knob of butter and pour in the eggs after beating them separately.
