Sausage With Eggs

  1. For fresh sausage, split it lengthwise and cook in a dry pan (it renders its own fat); for cured sausage, slice it and remove the skin.
  2. Once cooked, break the eggs over the sausage (one, at most two, per link) and serve when set.
  3. If the sausage is very lean, cook it with a little butter or lard.
  4. If using diced cured pancetta instead, add a knob of butter and pour in the eggs after beating them separately.
