Stuffed Potato Balls

Instructions

  1. Boil, peel, and sieve the hot potatoes onto a dusting of flour; make a well, salt, add nutmeg, and mix in the eggs and Parmesan.
  2. Using as little flour as possible, form a soft dough and divide it into 18 pieces.
  3. With floured fingers, hollow each piece, fill with a meat battuto (finely chopped mixture), close over the edges, and roll into round balls.
  4. Fry in lard or oil and serve as a garnish to fried meat.
