Stuffed Potato Balls

Ingredients
- g potatoes
- heaping tbsp Parmesan cheese
- eggs
- nutmeg
- flour
- meat filling (battuto, a finely chopped mixture)
- lard or oil
Instructions
- Boil, peel, and sieve the hot potatoes onto a dusting of flour; make a well, salt, add nutmeg, and mix in the eggs and Parmesan.
- Using as little flour as possible, form a soft dough and divide it into 18 pieces.
- With floured fingers, hollow each piece, fill with a meat battuto (finely chopped mixture), close over the edges, and roll into round balls.
- Fry in lard or oil and serve as a garnish to fried meat.
