Broth for the Sick

Instructions

  1. Lay thin slices of lean veal or beef flat, stacked, in a wide pan; salt lightly and add cold water just to cover.
  2. Seal the pan with a plate kept topped with water, and cook six hours at the barest simmer.
  3. Boil hard for ten minutes, then strain through a cloth. About 2 kg of meat gives roughly two-thirds to three-quarters of a liter.
