Broth for the Sick

Ingredients
- kg lean veal or beef
- salt
- cold water
Instructions
- Lay thin slices of lean veal or beef flat, stacked, in a wide pan; salt lightly and add cold water just to cover.
- Seal the pan with a plate kept topped with water, and cook six hours at the barest simmer.
- Boil hard for ten minutes, then strain through a cloth. About 2 kg of meat gives roughly two-thirds to three-quarters of a liter.
