Hollow Meat Balls (Zhenjiang Style)

Ingredients

Instructions

  1. Pound the pork until very fine.
  2. Pass it through a sieve to achieve a smooth paste.
  3. Place a small piece of chilled pork lard in the center of the pork paste.
  4. Form the paste around the lard into a ball, encasing it completely.
  5. Steam the balls until cooked through.
  6. As the lard melts during steaming, it will drain away, leaving the meat ball hollow inside.
