Hollow Meat Balls (Zhenjiang Style)

Ingredients
- ground pork
- 1 small piece chilled pork lard
Instructions
- Pound the pork until very fine.
- Pass it through a sieve to achieve a smooth paste.
- Place a small piece of chilled pork lard in the center of the pork paste.
- Form the paste around the lard into a ball, encasing it completely.
- Steam the balls until cooked through.
- As the lard melts during steaming, it will drain away, leaving the meat ball hollow inside.
