  1. Carefully pick through the rice and wash it thoroughly until the water runs clear.
  2. Cook the rice until it reaches half-done (not fully tender). Transfer to a pot and braise (gently simmer) in equal parts chicken stock and ham stock.
  3. Bring to the table only when the grains are distinct and separate—the chicken and ham should dissolve completely into the essence, leaving no visible pieces. The refinement lies in tasting the umami of the broths in each grain of rice, not in seeing chunks of meat.
