To Roast a Goose

Ingredients
- 2 onions
- 0.5 ounce sage leaves
- 1 saltspoonful salt
- 0.5 saltspoonful black pepper
- 1 small slice fresh butter
- brown gravy
- apple sauce
- tomata sauce
Instructions
- Pluck and singe the goose with care.
- Parboil two onions of moderate size and chop them finely.
- Mix the chopped onions with half an ounce of minced sage leaves, a saltspoonful of salt, half as much black pepper (or cayenne to taste), and a small slice of fresh butter.
- Put the seasoning mixture into the body of the goose.
- Truss the goose.
- Place the goose on the spit and tie it firmly at both ends so it turns steadily and the seasoning does not escape.
- Roast at a brisk fire, keeping it constantly basted throughout cooking.
- Serve with brown gravy and apple or tomata sauce.
