To Roast a Goose

Instructions

  1. Pluck and singe the goose with care.
  2. Parboil two onions of moderate size and chop them finely.
  3. Mix the chopped onions with half an ounce of minced sage leaves, a saltspoonful of salt, half as much black pepper (or cayenne to taste), and a small slice of fresh butter.
  4. Put the seasoning mixture into the body of the goose.
  5. Truss the goose.
  6. Place the goose on the spit and tie it firmly at both ends so it turns steadily and the seasoning does not escape.
  7. Roast at a brisk fire, keeping it constantly basted throughout cooking.
  8. Serve with brown gravy and apple or tomata sauce.
