Broiled Mutton Kidneys

Ingredients
- mutton kidneys
- pepper or cayenne
- optional oil or clarified butter
- optional Maître d'Hôtel sauce
Instructions
- Split the kidneys open lengthwise without dividing them completely.
- Strip off the skin and fat from the kidneys.
- Run a fine skewer through the pointed ends and across the back to keep them flat during cooking.
- Season the kidneys with pepper or cayenne.
- If desired, brush a very small quantity of oil or clarified butter over the kidneys (French method).
- Lay the kidneys over a clear, brisk fire with the cut sides facing the heat.
- Turn the kidneys after four to five minutes of cooking.
- Cook for another four to five minutes until done.
- Transfer the kidneys to a serving dish and serve immediately, optionally with cold Maître d'Hôtel sauce underneath.
