White Cabbage as a Side Dish

Instructions

  1. Quarter and wedge the cabbage, soak, blanch in salted water, and drain without wringing.
  2. Brown a base of prosciutto and onion in butter, arrest with broth, and strain the gravy.
  3. Simmer the cabbage in the gravy with a piece of prosciutto, pepper, and a little salt.
  4. Remove the prosciutto and serve as a garnish for boiled meat.
