  1. Select fresh lagenaria shoots. Stir-fry them in lard over controlled heat until cooked through, without added broth or liquid—the dish's excellence lies in achieving a dry, clean finish (乾鮮無湯). After a snowfall, the greens become especially tender and refined. Do not add other ingredients. The key is proper heat control (火候) to preserve the vegetable's natural sweetness and texture.
