German-Style Brown Bread Cake

Ingredients
- g sweet almonds
- g sugar
- spoonfuls cognac
- heaped spoonfuls grated rye-bread crust
- eggs
- g butter
- g chocolate
- g powdered (icing) sugar
Instructions
- Work the sugar with two whole eggs, then add the pounded almonds and work again.
- Stir in the grated rye crust and three yolks, then the cognac.
- Fold in the three whipped whites.
- Bake in a greased, sugar-and-flour-dusted tin.
- Finish with the soft crust of recipe 645, or a glaze of melted butter, chocolate and icing sugar spread on when off the boil.
