Yellow Sauce for Boiled Fish

Ingredients
- g butter
- heaping tsp flour
- ladles fish broth
- tbsp olive oil
- egg yolk
- lemon lemon juice
- salt and pepper
Instructions
- Cook 20 g butter with a heaping teaspoon of flour until hazelnut-colored, then add two ladles of fish broth gradually.
- When the flour no longer swells on boiling, remove from heat and stir in two tablespoons of oil and an egg yolk.
- Add the juice of half a lemon, salt, and pepper. Cool, then pour over the fish and garnish with parsley (or serve warm if preferred).
