Yellow Sauce for Boiled Fish

Instructions

  1. Cook 20 g butter with a heaping teaspoon of flour until hazelnut-colored, then add two ladles of fish broth gradually.
  2. When the flour no longer swells on boiling, remove from heat and stir in two tablespoons of oil and an egg yolk.
  3. Add the juice of half a lemon, salt, and pepper. Cool, then pour over the fish and garnish with parsley (or serve warm if preferred).
