Common Suet Forcemeat

Ingredients
- 6 ounces beef suet (or veal-kidney suet)
- 8 ounces bread-crumbs
- herbs, spice, salt, and lemon-peel
- 2 whole eggs
- milk or egg yolk
Instructions
- Strip the suet carefully of all skin and mince it small.
- Combine the minced suet with bread-crumbs, herbs, spice, salt, and lemon-peel in equal proportions to those in the preceding receipt.
- Very slightly beat the eggs after removing any specks with a small fork.
- Add the beaten eggs to the mixture.
- If more liquid is required, add the yolk of another egg or a spoonful or two of milk.
- Form into balls or use to stuff a joint of veal.
- Fry or brown the balls beneath the roast, or fry them separately for eight to ten minutes until well done.
- Dish the forcemeat balls around the roast.
