To Boil Shrimps or Prawns

Ingredients
- 5 to 6 ounces salt
- shrimps or prawns
- plenty of water
Instructions
- Add salt to plenty of fast boiling water in the proportion of five to six ounces to the gallon.
- Throw in the shrimps or prawns and take off all the scum as it rises.
- Boil shrimps for five to six minutes, or rather less should they be very small.
- Boil prawns for about two minutes longer than shrimps, or six to eight minutes total.
- As soon as they are tender, drain them well in a colander.
- Spread them out on a soft cloth to cool, or dish them on a napkin and send them hot to table if preferred that way.
