To Boil Shrimps or Prawns

Instructions

  1. Add salt to plenty of fast boiling water in the proportion of five to six ounces to the gallon.
  2. Throw in the shrimps or prawns and take off all the scum as it rises.
  3. Boil shrimps for five to six minutes, or rather less should they be very small.
  4. Boil prawns for about two minutes longer than shrimps, or six to eight minutes total.
  5. As soon as they are tender, drain them well in a colander.
  6. Spread them out on a soft cloth to cool, or dish them on a napkin and send them hot to table if preferred that way.
