Another Good Receipt for Walnut Catsup

Instructions

  1. Beat one hundred green walnuts in a large marble mortar until thoroughly bruised and broken.
  2. Put the bruised walnuts into a stone jar with the sliced eschalots, whole garlic head, salt, and vinegar.
  3. Let them stand for ten days, stirring night and morning.
  4. Strain off the liquor.
  5. Boil the strained liquor for half an hour with the addition of anchovies, whole black pepper, cloves, and mace.
  6. Skim well and strain off the spiced vinegar.
  7. When quite cold, pour gently from the sediment into small dry bottles.
  8. Secure from air by sound corking and store in a dry place.
