Another Good Receipt for Walnut Catsup

Ingredients
- 100 green walnuts
- 0.5 lb. eschalots (shallots)
- 1 head garlic
- 0.5 lb. salt
- 2 quarts vinegar
- 2 oz. anchovies
- 2 oz. black pepper
- 0.5 oz. cloves
- 2 drachms mace
Instructions
- Beat one hundred green walnuts in a large marble mortar until thoroughly bruised and broken.
- Put the bruised walnuts into a stone jar with the sliced eschalots, whole garlic head, salt, and vinegar.
- Let them stand for ten days, stirring night and morning.
- Strain off the liquor.
- Boil the strained liquor for half an hour with the addition of anchovies, whole black pepper, cloves, and mace.
- Skim well and strain off the spiced vinegar.
- When quite cold, pour gently from the sediment into small dry bottles.
- Secure from air by sound corking and store in a dry place.
