Stewed Red Cabbage (Flemish Receipt)

Ingredients
- 1 head red cabbage
- 2 ounces butter
- pepper
- salt
- 1 tablespoon vinegar
- broiled sausages
- lemon-juice
- cayenne pepper
- 0.5 cup good gravy
Instructions
- Strip the outer leaves from the red cabbage, wash it well, and remove the stalk entirely by splitting it in quarters.
- Cut the cabbage into the thinnest possible slices, beginning at the top.
- Dissolve the butter in a thick saucepan just before use.
- Add the sliced cabbage, pepper, and salt to the butter.
- Stew the cabbage very slowly for three or four hours in its own juice, keeping it often stirred and well pressed down.
- When the cabbage is perfectly tender, add the vinegar and mix the whole thoroughly.
- Heap the cabbage in a hot dish and serve broiled sausages round it, or substitute lemon-juice, cayenne pepper, and a half-cupful of good gravy if omitting the sausages.
