Common Carrot Soup

Ingredients
- 2 quarts beef broth or bouillon
- 1.5 pounds carrots, highly coloured
- to taste salt
- to taste cayenne pepper
Instructions
- Boil highly coloured carrots quite tender in slightly salted water.
- Pound or mash the carrots to a smooth paste.
- Mix the mashed carrots with two quarts of boiling beef broth or strong gravy soup in the proportion of two quarts to a pound and a half of prepared carrots.
- Pass the whole through a strainer.
- Season with salt and cayenne to taste.
- Heat in a clean stewpan and serve immediately.
