Common Carrot Soup

Ingredients

Instructions

  1. Boil highly coloured carrots quite tender in slightly salted water.
  2. Pound or mash the carrots to a smooth paste.
  3. Mix the mashed carrots with two quarts of boiling beef broth or strong gravy soup in the proportion of two quarts to a pound and a half of prepared carrots.
  4. Pass the whole through a strainer.
  5. Season with salt and cayenne to taste.
  6. Heat in a clean stewpan and serve immediately.
