To Roast a Beef Heart

Ingredients

Instructions

  1. Wash and soak the heart very thoroughly.
  2. Cut away the lobes.
  3. Fill the cavities with veal forcemeat.
  4. Secure the forcemeat well with a needle and twine or very coarse thread.
  5. Roast the heart at a good fire for an hour and a half, keeping it basted plentifully with butter.
  6. Pour melted butter over it after it is dished.
  7. Send it to table as hot as possible.
