To Broil or Fry Pork Cutlets

  1. Trim the pork cutlets into neat form and remove part or all of the fat according to preference.
  2. Dredge a little pepper or cayenne upon the cutlets.
  3. For broiling: broil them over a clear and moderate fire for fifteen to eighteen minutes.
  4. Sprinkle a little fine salt upon them just before dishing.
  5. Alternatively, dip the cutlets into egg (with clarified butter added to the egg or sprinkled on the cutlets) and then into bread-crumbs mixed with minced sage, and finish in the usual way.
  6. For frying: flour the cutlets well.
  7. Season them with salt and pepper first.
  8. Fry the cutlets.
  9. Serve with gravy in the pan or with sauce Robert.
