Ingredients
- alexanders (horse parsley, holisatrum)
- natron (soda) water
- pepper
- lovage
- coriander
- savory
- onion
- wine
- liquamen (Roman fermented fish sauce)
- vinegar
- oil
- wheat starch (amulum)
- thyme
Instructions
- Boil alexanders in natron water and press into a pan.
- Grind pepper, lovage, coriander, savory and onion with wine, liquamen, vinegar and oil.
- Add to the pan, cook, thicken with starch; finish with thyme and fine pepper.
