Hunter's-Style Rice

  1. Cut a chicken into pieces, discarding head and feet.
  2. Make a soffritto of fatback, garlic and parsley; when it colours, add the chicken.
  3. Add a piece of butter, season with salt and pepper, and brown the chicken.
  4. Tip the chicken into a pot of boiling water, throw in the rice, and cook.
  5. Before removing from the heat, flavour with a good handful of parmesan. Keep the rice from being overcooked or too soupy.
