Norfolk Sauce, or Rich Melted Butter without Flour

Ingredients

Instructions

  1. Put three tablespoonsful of water into a small saucepan and bring to a boil.
  2. Add four ounces of fresh butter.
  3. As soon as the butter is quite dissolved, remove the saucepan from the fire.
  4. Shake the saucepan round until the sauce looks thick and smooth.
  5. Do not allow it to boil after the butter is added.
