Tartar Mustard

Ingredients
- 4 oz Durham mustard
- 1 teaspoon salt
- 1 dessertspoon cayenne or chili vinegar
- 1–2 dessertspoon tarragon vinegar
- 1/3 pint horseradish vinegar
Instructions
- Rub the Durham mustard very smooth with the salt.
- Wet the mustard gradually with the horseradish vinegar, cayenne or chili vinegar, and tarragon vinegar if desired.
- If making fresh horseradish vinegar, pour a quarter pint of boiling vinegar over an ounce of scraped horseradish and cover closely.
- Let the horseradish vinegar stand overnight, or 2–3 days for better flavour, before using in the mustard.
