Tartar Mustard

Instructions

  1. Rub the Durham mustard very smooth with the salt.
  2. Wet the mustard gradually with the horseradish vinegar, cayenne or chili vinegar, and tarragon vinegar if desired.
  3. If making fresh horseradish vinegar, pour a quarter pint of boiling vinegar over an ounce of scraped horseradish and cover closely.
  4. Let the horseradish vinegar stand overnight, or 2–3 days for better flavour, before using in the mustard.
