  1. Cut the chicken into pieces. Heat the vegetable oil in a wok until shimmering. Stir-fry the chicken pieces until they are thoroughly cooked through and caramelized.
  2. Add the Shaoxing wine and bring to a rolling boil; let it boil vigorously for twenty rolls of the wok. Then add water and continue simmering for approximately two to three hundred rolls (gentle sustained cooking, not aggressive boiling).
  3. Add the autumn-pressed soy sauce (秋油). At the moment of plating, finish with white sugar to achieve balance.
