Grape Wine

Instructions

  1. Pick grapes from stems, wash, drain, and mash thoroughly. Add full-boiling water in equal measure to the grapes. Let stand twelve hours (or twenty-four hours if very deep color is desired and grapes are black).
  2. Strain and measure the juice. Add three pounds of sugar to each gallon of juice, stirring until dissolved. Pour into a clean vessel, filling it only three-parts full. Cover the mouth with lawn (fine cloth) and let stand in clean warm air until fermentation ceases.
  3. Close tight and let stand a month longer. Rack off, filtering the last runnings through triple cheese cloth. Bottle and cork tight.
  4. Store in a dark, warm place rather than cool, but away from any sort of taints.
