Nut Bread for Sandwiches (Mrs. Petre)

Origin: Clarksville, Tennessee

Source: Martha McCulloch-Williams, 1913

Ingredients

Instructions

  1. Beat the two eggs very light. Add a scant teaspoon of salt, half cup sugar, and two cups milk to the beaten eggs. Sift the flour twice together with the baking powder. Mix the dry ingredients with the egg and milk mixture, stirring until smooth. Fold in one cup of finely chopped nuts.
  2. Pour into a double pan and let the batter raise for twenty minutes. Bake in a moderately quick oven until done.
  3. Do not attempt to slice until the bread is perfectly cold—it is better to wait until the next day, keeping the bread in a place where it will not dry out. Slice very thin and butter each slice. Use for sandwiches with any sort of good filling.
