German Stew

Instructions

  1. Cut the beef into about three-inch squares.
  2. Set the beef on to stew with rather less than a quart of cold broth or water and one large sliced onion.
  3. When these begin to boil, add a teaspoonful of salt and a third as much pepper.
  4. Let them simmer gently for an hour and a half.
  5. Parboil young white cabbages and press the water well from them.
  6. Lay the parboiled cabbages in with the beef.
  7. Let the whole stew for another hour.
  8. If desired, add more onions, mixed spices, or bits of lean bacon or ham for higher flavour before serving.
