Stewed Cod

Ingredients
- 3 lbs fresh cod fish
- water
- nearly 1 pint veal gravy or very good broth
- 4 tablespoonsful bread-crumbs
- 1 large teaspoonful arrow-root
- 1/4 teaspoonful mace
- cayenne
- 1 tablespoonful essence of anchovies
- 1 wineglassful white wine
- 1 dessertspoonful lemon juice
Instructions
- Put the cod fish slices into boiling salted water and boil gently for five minutes.
- Lift the fish out and drain well.
- Heat nearly a pint of veal gravy or very good broth in a wide stewpan.
- Lay in the drained fish and stew for five minutes.
- Add four tablespoonsful of extremely fine bread-crumbs and simmer for three minutes longer.
- Mix together the arrow-root (quite free from lumps), mace, cayenne, essence of anchovies, white wine, and lemon juice.
- Stir this mixture well into the sauce.
- Boil the whole for a couple of minutes.
- Carefully lift out the fish with a slice and place on a serving dish.
- Pour the sauce over the fish and serve quickly.
