Refashioned Boiled Beef

Ingredients
- g boiling beef (short, thick piece)
- cured pork belly (carnesecca)
- onion
- celery
- carrot
- butter
- salt
- pepper
- spices
- tomato sauce or paste dissolved in broth
- handful dried mushrooms
Instructions
- Take a short, thick piece of boiling beef (at least 500 g) from the broth before it is fully cooked.
- Set it over a battuto of cured pork belly, onion, celery, carrot and butter; season with salt, pepper and spices.
- When the battuto has melted, cook the meat through with tomato sauce or paste in broth.
- Strain and degrease the gravy, then return it to the fire with the meat and softened dried mushrooms.
