Refashioned Boiled Beef

Instructions

  1. Take a short, thick piece of boiling beef (at least 500 g) from the broth before it is fully cooked.
  2. Set it over a battuto of cured pork belly, onion, celery, carrot and butter; season with salt, pepper and spices.
  3. When the battuto has melted, cook the meat through with tomato sauce or paste in broth.
  4. Strain and degrease the gravy, then return it to the fire with the meat and softened dried mushrooms.
