Chicken in Tuna Sauce

Ingredients
- 1 young chicken, drawn (no innards, neck or feet)
- salt
- pepper
- 2 tbsp olive oil
- 50 g tuna in oil
- 30 g capers
- 3 anchovies
- parsley
- 1/2 tbsp vinegar
- 2 hard-boiled eggs
Instructions
- Boil the drawn chicken half an hour, then skin and bone it, cut into pieces, and dress with salt, pepper and 2 tbsp oil; let sit several hours.
- Clean anchovies; chop parsley fine, then pound with tuna, capers and anchovies to a fine paste.
- Thin the sauce with 4 tbsp oil and 1/2 tbsp vinegar.
- Coat the chicken with the sauce and garnish with hard-boiled egg wedges.
- Serves six; scrape the mortar clean with a slice of raw potato.
