Superior Mint-Sauce

Instructions

  1. Select fresh, young mint leaves, avoiding old mint which is tough and indigestible.
  2. Strip the leaves from the stems.
  3. Wash the leaves with great care.
  4. Drain the leaves on a sieve or dry them in a cloth.
  5. Chop the mint leaves very fine.
  6. Put the chopped mint into a sauce-tureen.
  7. Add two heaped tablespoonsful of pounded sugar to the three heaped tablespoonsful of chopped mint.
  8. Let the mint and sugar remain a short time, well mixed together.
  9. Gradually pour six tablespoonsful of good vinegar into the mixture.
