Superior Mint-Sauce

Ingredients
- 3 heaped tablespoonsful fresh young mint leaves
- 2 tablespoonsful pounded sugar
- 6 tablespoonsful good vinegar
Instructions
- Select fresh, young mint leaves, avoiding old mint which is tough and indigestible.
- Strip the leaves from the stems.
- Wash the leaves with great care.
- Drain the leaves on a sieve or dry them in a cloth.
- Chop the mint leaves very fine.
- Put the chopped mint into a sauce-tureen.
- Add two heaped tablespoonsful of pounded sugar to the three heaped tablespoonsful of chopped mint.
- Let the mint and sugar remain a short time, well mixed together.
- Gradually pour six tablespoonsful of good vinegar into the mixture.
