Salsify

Ingredients
- salsify roots
- plenty of water
- a little salt
- a small bit butter
- a couple of spoonsful white vinegar or lemon juice
- white sauce, brown gravy, or melted butter
Instructions
- Wash the salsify roots and scrape gently off the dark outside skin.
- Throw them into cold water as you finish each one to prevent them from turning black.
- Cut them into lengths of three or four inches.
- When all are ready, put them into plenty of boiling water with a little salt, a small bit of butter, and a couple of spoonfuls of white vinegar or the juice of a lemon.
- Cook for from three quarters of an hour to an hour.
- Test them with a fork, and when perfectly tender, drain well.
- Serve them with white sauce, rich brown gravy, or melted butter.
