Boiled Partridges

Ingredients
- 2 whole young, tender partridges
- salt
- 1 tablespoon fresh butter
- 1 tablespoon lemon juice
- cayenne
Instructions
- Strip off the feathers from the partridges, clean, and wash them well.
- Cut off the heads and truss the legs as you would for boiled fowls.
- Bring a large pan of water to a boil and drop in the prepared birds.
- Throw a little salt on the birds and cook for fifteen to eighteen minutes until ready to serve.
- Lift them out carefully and dish them quickly.
- Place the fresh butter, lemon juice, and cayenne in a very hot dish beneath the birds and send to table.
