  1. Use only the sweet wine—no water. Braise the chicken over low heat (文火) until eight-tenths cooked, then add the mushrooms. Continue braising over gentle fire until the chicken is fully tender, about two incense-sticks' duration (roughly 30–45 minutes, a classical timing measure). The heat control (火候) is crucial: maintain a steady, low flame to allow flavors to meld without scorching. The final dish should be fragrant and unified, with the mushrooms having absorbed the wine's sweetness and the chicken's essence.
