Strawberry Wine

Ingredients
- strawberries
- equal bulk water
- 2.5 pounds sugar
Instructions
- Mash thoroughly clean, hulled, very ripe berries. Add boiling water in equal bulk to the berries and let stand six hours.
- Strain the mixture. Put the strained juice in a preserving kettle with two and a half pounds of sugar for each gallon of juice. Bring to a boil and skim clean.
- Pour into clean vessels and close the mouths with thin cloth. Let stand until fermentation ceases.
- Note: In a wet season when berries are particularly juicy, use less water or add more sugar as needed.
