To Boil Potatoes (The Lancashire Way)

Instructions

  1. Pare the potatoes and cover them with cold water.
  2. Boil them slowly until they are quite tender, watching carefully so they do not overcook.
  3. Drain off the water entirely.
  4. Strew salt over the potatoes.
  5. Leave the saucepan uncovered by the side of the fire.
  6. Shake the saucepan forcibly every minute or two until all the potatoes appear dry and floury.
