To Boil Rabbits

Ingredients
- rabbits
- sufficient water
- rich white sauce
- white onion sauce
- parsley and butter sauce
- mushroom sauce
Instructions
- Wash the rabbits well.
- Truss them firmly, turning the heads and skewering them to the sides.
- Drop them into sufficient boiling water to keep them quite covered.
- Simmer gently for thirty to forty-five minutes (very young rabbits will require less time).
- Cover the cooked rabbits with one of the prepared sauces: rich white sauce mixed with parboiled and pounded rabbit livers seasoned with cayenne and lemon-juice; white onion sauce; parsley and butter sauce made with milk or cream (with minced livers often added); or good mushroom sauce.
