To Boil Rabbits

Instructions

  1. Wash the rabbits well.
  2. Truss them firmly, turning the heads and skewering them to the sides.
  3. Drop them into sufficient boiling water to keep them quite covered.
  4. Simmer gently for thirty to forty-five minutes (very young rabbits will require less time).
  5. Cover the cooked rabbits with one of the prepared sauces: rich white sauce mixed with parboiled and pounded rabbit livers seasoned with cayenne and lemon-juice; white onion sauce; parsley and butter sauce made with milk or cream (with minced livers often added); or good mushroom sauce.
