Spring-Stew of Veal

Ingredients
- 2 lbs veal
- 2 cucumbers
- 1 lettuce
- 24 green gooseberries
- butter
- 0.5 pint water, broth, or gravy
- salt and pepper
- green onions
Instructions
- Season the veal cutlets lightly with salt and pepper, then flour them well.
- Flour the sliced cucumbers and seeded green gooseberries.
- Heat butter in a pan and fry the floured veal cutlets with the cucumbers, gooseberries, and lettuce until nicely browned.
- Transfer the browned meat and vegetables to a thick saucepan.
- Gradually pour half a pint or more of boiling water, broth, or gravy into the frying pan and give it a minute's simmer, adjusting salt and pepper to taste.
- Pour the liquid over the meat in the saucepan, shaking it well around the pan.
- Let the veal stew gently for three quarters of an hour to an hour.
