Spring-Stew of Veal

Instructions

  1. Season the veal cutlets lightly with salt and pepper, then flour them well.
  2. Flour the sliced cucumbers and seeded green gooseberries.
  3. Heat butter in a pan and fry the floured veal cutlets with the cucumbers, gooseberries, and lettuce until nicely browned.
  4. Transfer the browned meat and vegetables to a thick saucepan.
  5. Gradually pour half a pint or more of boiling water, broth, or gravy into the frying pan and give it a minute's simmer, adjusting salt and pepper to taste.
  6. Pour the liquid over the meat in the saucepan, shaking it well around the pan.
  7. Let the veal stew gently for three quarters of an hour to an hour.
