Cauliflowers with Parmesan Cheese

Instructions

  1. Remove all green leaves from two or three fine white cauliflowers and cut the stalks off very closely so they will stand upright in the serving dish.
  2. Boil them until tolerably tender but not so soft they break.
  3. Drain them well and arrange them in the dish to give the appearance of one whole cauliflower.
  4. Pour a little good white sauce equally over the tops.
  5. Strew grated Parmesan cheese over the sauce.
  6. Drop a little clarified butter over the cheese.
  7. Add another layer of cheese.
  8. Cover the whole with the finest bread-crumbs.
  9. Moisten the bread-crumbs with more clarified butter.
  10. Brown the top with a salamander, or set the dish into the oven to give it colour.
  11. Pour white sauce around the cauliflowers and send them very hot to table.
