Cauliflowers with Parmesan Cheese

Ingredients
- 2 fine white cauliflowers
- good white sauce
- Parmesan cheese, grated
- clarified butter
- finest bread-crumbs
- white sauce
Instructions
- Remove all green leaves from two or three fine white cauliflowers and cut the stalks off very closely so they will stand upright in the serving dish.
- Boil them until tolerably tender but not so soft they break.
- Drain them well and arrange them in the dish to give the appearance of one whole cauliflower.
- Pour a little good white sauce equally over the tops.
- Strew grated Parmesan cheese over the sauce.
- Drop a little clarified butter over the cheese.
- Add another layer of cheese.
- Cover the whole with the finest bread-crumbs.
- Moisten the bread-crumbs with more clarified butter.
- Brown the top with a salamander, or set the dish into the oven to give it colour.
- Pour white sauce around the cauliflowers and send them very hot to table.
