To Make Cocoa

Instructions

  1. For prepared cocoa, or the best quality: directions are usually sold with it, and it is merely mixed with boiling water in the proportions indicated on the packets.
  2. For cocoa prepared from the nibs: it requires several hours' boiling.
  3. Leave it until it is quite cold, so that the oil found on the surface may be cleared from it before it is again heated for table.
  4. Acton is emphatic that this clearing is particularly needful when the cocoa is to be served to persons in delicate health.
