Another Good Common Forcemeat

Ingredients

Instructions

  1. Combine the bread-crumbs, finely minced ham, butter, chopped herbs, lemon-grate, and the mixture of nutmeg, mace, and cayenne with salt to taste.
  2. Add the whole egg, or the yolks of two eggs, and mix all together until well combined.
  3. Form the mixture into balls of moderate size.
  4. Fry them for five minutes, turning carefully, until golden.
  5. Serve with roast veal, or alternatively, the forcemeat may be stuffed into a joint of veal in the usual manner before roasting.
