Another Good Common Forcemeat

Ingredients
- 4 oz bread-crumbs
- 2 oz lean of boiled ham
- 2 oz good butter
- 1 dessertspoonful herbs, chopped small
- 1 teaspoonful lemon-grate
- 1 small teaspoonful nutmeg, mace, and cayenne
- salt
- 1 whole egg
Instructions
- Combine the bread-crumbs, finely minced ham, butter, chopped herbs, lemon-grate, and the mixture of nutmeg, mace, and cayenne with salt to taste.
- Add the whole egg, or the yolks of two eggs, and mix all together until well combined.
- Form the mixture into balls of moderate size.
- Fry them for five minutes, turning carefully, until golden.
- Serve with roast veal, or alternatively, the forcemeat may be stuffed into a joint of veal in the usual manner before roasting.
