Baked Apple Sauce

Ingredients
- 1 tablespoon water
- 1 quart good boiling apples, pared, quartered, and cored
- 1 oz sugar
- 1/2 oz fresh butter
Instructions
- Put a tablespoon of water into a quart basin.
- Fill the basin with good boiling apples that have been pared, quartered, and carefully cored.
- Place a plate over the basin and set it into a moderate oven for about an hour, or until the apples are reduced quite to a pulp.
- Beat the apples smooth with a clean wooden spoon.
- Add sugar and a morsel of fresh butter to taste, if desired.
