Braised Sparrows

Instructions

  1. Take fifty fresh sparrows. Braise them in clear soy sauce and sweet wine until cooked through. Remove the feet and claws, retaining only the breast meat and head meat. Serve in a bowl with the braising liquid. The flavor will be both sweet and fresh, remarkably so.
  2. Note: This method may be applied to other game birds and fowl by the same principle. However, fresh wild game is difficult to obtain at all times. The scholar Xue Shengbai often counseled people: "Do not eat domesticated creatures raised by humans." Wild game possesses superior flavor and is more easily digested.
