Domestic Goose

Ingredients
- goose
- prosciutto or salted anchovies
- olive oil, pepper and salt
- goose liver (with its fat and heart)
- lemon wedges
Instructions
- Goose can be stewed or roasted like domestic duck; the grilled breast is studded with prosciutto (or salted anchovies) and seasoned with oil, pepper and salt.
- To cook the liver simply: first render the coarsely cut fat, then add the heart in wedges, and last the liver in thick slices.
- Season with salt and pepper only; drain excess fat and serve with lemon wedges. See recipe 274 for goose liver.
