Devil's Chicken

Instructions

  1. Remove the neck and feet from a cockerel/young chicken, open it flat along the front, and press it as flat as possible; wash and dry well.
  2. Grill it, turning when it begins to brown; brush with melted butter or oil and season with salt and pepper.
  3. Turn and repeat on the other side, continuing to brush and season until cooked.
  4. For the true 'devil' version, use strong Cayenne pepper and serve with a very piquant sauce.
