Devil's Chicken

Ingredients
- young cockerel or spring chicken
- butter (melted) or olive oil
- salt
- pepper
- hot/piquant sauce
Instructions
- Remove the neck and feet from a cockerel/young chicken, open it flat along the front, and press it as flat as possible; wash and dry well.
- Grill it, turning when it begins to brown; brush with melted butter or oil and season with salt and pepper.
- Turn and repeat on the other side, continuing to brush and season until cooked.
- For the true 'devil' version, use strong Cayenne pepper and serve with a very piquant sauce.
