Red Mullet with Prosciutto

Instructions

  1. Clean, wash, and dry the medium red mullet, then marinate some hours in salt, pepper, oil, and lemon juice.
  2. Cut thin prosciutto slices (fat and lean) as wide as the mullet, one per fish.
  3. Scatter sage in a dish, coat the mullet in breadcrumbs, and set them upright pressed together with prosciutto between each; top with more sage.
  4. Pour over the leftover seasoning and cook between two fires (optionally bone the fish while raw first).
