Shrimp Pie

  1. Boil and pick the shrimps from their shells. Mix the boiled shrimps well with two large slices of stale bread (crusts removed), moistened with two glasses of white wine. Season the mixture highly with salt, pepper, Cayenne, nutmeg, mace, chopped thyme, and chopped parsley.
  2. Crisp the bread crusts separately and grate them over the shrimp mixture after it is packed into a deep dish. Dot the top well with butter.
  3. Bake in a hot oven until cooked through.
  4. For the sauce: Cook together one pint of boiled shrimps, a tablespoonful of butter, five chopped tomatoes, a little celery, thyme, parsley, and chopped bay leaf for three to four minutes. Then add half a pint of oyster liquor, bring to a boil, and serve very hot over the pie.
